Let’s make it!
Start my preparing your ingredients. Cut the beef into 1 inch chunks. Dice your yellow onions, chop the carrots and potatoes into bite size chunks (put the potato in cold water), and marinate the beef in salt, pepper, a tbsp of ginger garlic paste, turmeric, and 2 tbsp Greek yogurt.
Next, cut little Xs in the bottom of the tomato skins. Simmer until soft. Allow them to cool, and peel the skin off. You can optionally scoop out the seeds but it’s not important. Dice your stewed tomatoes.
Next step is the make the roux. Melt 1/3 cup of lard (or butter) in a pan, add in an equal amount of flour. Stir constantly on medium low heat until you get a nice blonde roux. Add in a big pinch of salt, 2 tbsp Japanese curry powder, and 1.5 tbsp garam masala. Stir to combine and set aside.
Saute the diced onions in a Dutch oven in some lard until slightly brown and tender. Add in the curry roux and mix to combine. Next, add the tomatoes, beef, and beef stock. Bring to a simmer and cook partially covered for 2 hours. Season with salt and pepper and add in 2-3 tbsp of honey.
Lastly add in the potatoes and carrots. Simmer until fully cooked. Serve on a plate or in a shallow bowl alongside rice and enjoy!
